Remove the rind from the brie cheese. Cut the brie into cubes and discard the rind.

Melt butter, add flour and stir until thickened. Slowly add heavy cream and evaporated milk and continue to stir until a roux forms.

Add the cubes of brie cheese to the pot and continue to stir over low heat until the brie is fully melted.

Add the shredded cheddar.

Continue to stir over low heat until all of the cheese is melted. Season with salt and fresh black pepper to taste.

Add the cooked macaroni and mix until it is fully coated in cheese. Top with toasted bread-crumbs and bake for 30 minutes at 350°F.
